Not a great picture, but these are tender, delicious blueberry muffins. Of course made in my Pie Maker. Here is my recipe, makes 4 muffins.

Jiffy Blueberry Muffins

1 C Biscuit Mix
1/4 C Sugar
1 Egg
1/8 C Cooking Oil
1/2 C Blueberries
mix all except blueberries, gently together. leave lumpy
stir in berries so they don't break and turn the batter blue.
bake in pie maker 8-10 minutes.

They are high calorie, have to do something about that.
Great muffins though.

It Arrived yesterday! How was that for fast? I ordered it last Friday and by Wednesday it was here.
I had download the manual from the manufacturer and read it in advance.

My first attempt was to make a packaged Jiffy Mix - biscuits. I already knew how they were supposed to come out. So I mixed up the mix, used milk, didnt measure. Just looked right.
Dropped the dough into the wells by spoonfulls and used all the dough to make 4 biscuits.
They came out fantastic. They filled the little wells to the top. I did't get pie edges because there was no crust. The outsides were all nice and crispy and yummy, The insides were fluffy and moist.
Excellent biscuits! And of course, they were the right size and amount for two for breakfast.
They measured 3 1/2 inches across and 1 1/2 inches thick. great for breads, appetizers
and desserts. But we will have to see how it does for main dishes
Must try something else today, I am thinking of individual impossible pie for lunch and something for dessert for dinner. Maybe some kind of custard pie, or cherry pie, or cheese tarts. Anyway I'll take pictures and post the recipes too.

Breville Pie Maker --- My new Toy!
I saw this pie maker and was so intrigued. I thought of portion control and still eating a good meal. I did think of dessert too! make them nice and small, almost no leftovers. This will be great for the two us. I checked lots of different machines and made this choice because it held a little more filling than other 4 pie makers but not as big as the two pie makers.
I just ordered it by mail so am waiting impatiently for it to arrive. I have also been researching recipes to use in it. Found lots of good ones. I cant wait to try it out!
